Today’s Cookbook VS. Cooked is from Amor Y Tacos: Modern Mexican Tacos, Margaritas and Anojitos. By Deborah Schneider. Cooked by Kait.

Essentially, this is a taco with a quesadilla for a shell. AMAZING. And it calls for Oaxaca or Queso Melt… cheeses that are produced specifically so they can melt. AMAZING. (Sometimes I think I was made specifically so I could melt).

This recipe took me probably two hours between making the guacamole, pico de gallo, Chipotle sauce and my own homemade tortillas (not included in the recipe… those are my Grandma’s). Word to the wise: Deborah calls for quite a few serrano peppers in pretty much every aspect of this taco. If you’re an Irish wimp like me, I would recommend using less or a less hot pepper like a Jalepeno.

Overall, a pretty smashing success. The guacamole had tequila and mangoes in it and as you can see in my photo, I was enjoying a St. Arnold Elissa with my lovely meal. Even my MacGuyver cook of a boyfriend resisted putting in his two cents!
